  • 3 (4 oz) The Better Fish® Barramundi Simply Skinless Fillets, thawed
  • 2 egg whites
  • ½ cup cornstarch
  • ½ cup white wine
  • 1 tablespoon onion powder
  • ½ teaspoon pink Himalayan sea salt
  • ½ cup crushed pecan pieces
  • ½ cup panko breadcrumbs

A kid-approved, air fryer recipe that will become a staple in your household!

INSTRUCTIONS

Step 1
Pat the Barramundi fillets dry with a paper towel and set aside.

Step 2
Whisk together egg whites with cornstarch in a medium bowl. Slowly add the white wine into the mixture, blending until it’s all uniform consistency. Add the onion powder and salt to the mixture, and stir until blended. Set aside.

Step 4
In another bowl or rimmed pan, combine the pecan pieces and breadcrumbs, making sure it’s blended well.

Step 5
Pre-heat the air fryer to 375℉. While it’s pre-heating, dredge the Barramundi fillets through the egg, starch and white wine mixture first and then coat with the pecan breadcrumbs. Make sure that all sides of the fish is well crusted.

Step 6
Cook the pecan-crusted Barramundi pieces in the air fryer for about 8 minutes or until it has reached an internal temperature of 140℉ and flakes easily. Serve immediately with a lemon wedge, a small mixed green salad, and roasted carrots. Top each piece of fish with some crumbled candied walnuts for added sweetness and texture.
