Crispy Barramundi Parmesan

  • 12 oz The Better Fish® Crispy Barramundi Tenders
  • ½ pound pasta, like spaghetti
  • ¾ cup your favorite marinara sauce, divided
  • ¾ cup shredded parmesan cheese (shred it fresh if you can!)
  • salt and pepper to taste
  • fresh basil for garnish (optional)

This easy riff on an Italian classic is perfect for busy weeknights! Grab a bag of Crispy Barramundi Tenders, a jar of your favorite marinara sauce, and some shredded parmesan for this quick dinner. Serve with your favorite pasta or a quick side salad for a complete meal. Recipe and photography by Jessie Johnson.

INSTRUCTIONS

Step 1
Heat oven to 425° F. Fill a large pot with water and bring it to a boil on the stovetop. Arrange The Better Fish Crispy Barramundi Tenders in a single layer on a baking sheet. Transfer to the hot oven and bake for 15 minutes.

Step 2
While the Barramundi bakes, cook your pasta in very salty water until al dente. Drain and set aside.

Step 3
Remove Barramundi Tenders from the oven. Use a spatula to gently flip them over on the baking sheet so the crispiest side is on top.

Step 4
Top each Barramundi Tender with a spoonful of marinara sauce, a sprinkle of parmesan cheese, and a pinch of salt and pepper. Return to the oven and bake 5-10 minutes more, until cheese has melted.

Step 5
Toss cooked pasta with the remaining marinara sauce. Serve immediately with Crispy Tenders. Garnish with fresh basil, cracked black pepper, and extra parmesan.

Recipe Notes

Use a jar of store-bought marinara sauce here to save time, or use your favorite homemade sauce! For best results, use a relatively thick tomato sauce to avoid the Crispy Tenders getting soggy.

Shred your own parmesan cheese here if you can: it will melt more smoothly and look a bit nicer. Traditional chicken parmesan often uses mozzarella; we’ve opted for just parmesan cheese here so the melted cheese doesn’t compete with the flavor or texture of the barramundi (but you can certainly add some shredded mozzarella if you like!
